Meals during the week can become a challenge when you have a full agenda with school, meetings, extracurricular activities, etc. There are just days in which you can’t even remember what 1 + 1 is because you are so overwhelmed with family activities.

Being at home and adjusting to life as a new family of 6, we have been slowly trying to experiment with new ways to coordinate once I have to go back to work. This has been perfect because even though I am home, there is so much happening that planning dinner is just hard to do.

I want to share with you some quick recipes I have come across on social media that have saved our lives during the hectic days.

I am no professional cook. Actually, the best cook in the house is my mom with her delicious Mexican recipes which I hope to one day be able to conquer. The following recipes are quick meal ideas I have made as a way to give her a break from cooking every day.

1. Lazy Lasagna

I found this recipe on Facebook under the “Eating on a Dime” page. This recipe has been one of our favorites, and it has been also an excellent activity for cooking together. The Lazy Lasagna is fun, easy, and perfect for any day of the week. Get the recipe.

2. Crispy Potato Tacos

We LOVE tacos! This recipe from “Muy Bueno Cookbook” is a great and easy idea to make tacos as a fulfilling dinner. It doesn’t have to be Taco Tuesday. These Crispy Potato Tacos will hit the spot any day. Get the recipe.

3. Easy Chicken Parmesan Casserole with Pasta

This great recipe I found on Pinterest after I was trying to find out how to use an extra rotisserie chicken we had left over. The recipe is from thelazydish.com and I have to say, it’s pretty good. It definitely helps you to put to use the leftover chicken you have and it is also kid-friendly. Get the recipe.

4. 15-Minute Pork Fried Rice

When craving Chinese, this is a good go-to. This delicious pork fried rice is from thekitchn.com. I like to buy some frozen dumplings to add as a side for it. I personally change the recipe by using pork chops and dice them into small pieces instead of ground pork. Get the recipe.

5. Meatball Subs

This EASY recipe is great! I found it on Facebook under The Best Blog Recipes page. My son and my husband love meat, so this recipe is one of my favorite ones at the house. The meatball subs are delicious and you can always play around with the recipe. If you have a busy day, you can use frozen meatballs and cook them in the slow cooker. Get the recipe.

These are just some of the recipes I have found that have been working great! Slowly, I am creating some of my own recipes for our family. I am incorporating some more Mexican food. (I have to admit, I am a bit scared to cook Mexican food and not be as great as my mom.) But I can’t wait to share those with you all.
